About Me
For 15 years, I worked as a roofer. It was honest, physical work — long days in tough conditions — but I knew I was meant to build something different.
With no formal kitchen training, I made the leap into cheffing. I landed a role as a Chef de Partie in a 2 AA Rosette restaurant — several ranks above where I should have been. I had no real experience, just resilience, hunger, and a relentless desire to learn. I worked 15-hour days, pushed beyond my limits, and came out forged by pressure and standards. I later moved into a sous chef role — just as COVID hit.
Shortly after, I was sentenced to 37 months in prison for offences committed years earlier. For nearly two years I spent 23½ hours a day behind a door. That season became one of reflection, accountability, and rebuilding.
While inside, I came across Redemption Roasters — a company roasting speciality coffee inside UK prisons, training prisoners with real skills and real employment pathways. Their ethos of restoration through opportunity deeply resonated with me. It wasn’t just about coffee; it was about dignity, responsibility, and second chances.
That seed stayed with me.
On release, I launched a coffee and food truck using Redemption Roasters coffee, aligning with a company whose mission mirrored my own journey. The business worked — but financial pressures eventually brought it to an end.
After a two‑year pause, prayer, rebuilding, and growth, Manna Made was born.
The name Manna Made comes from the story in Exodus where manna was provided daily in the wilderness — sustaining, timely, and enough for each day. It was provision, but it was also about trust and gratitude. That principle sits at the heart of this company: showing up daily, serving well, and being thankful for the opportunity to provide for others — especially in demanding environments like production and events.
Our mushroom logo carries that same meaning. Mushrooms symbolise regeneration and renewal — growing quietly beneath the surface, transforming what’s broken into nourishment, and sustaining entire ecosystems through unseen networks. It represents humility, restoration, and the belief that growth often happens in hidden places before it becomes visible.
Today, I’m in active recovery through Alcoholics Anonymous. My sobriety and faith are the foundation of this company. Manna Made is built on social justice, regeneration, and helping others rebuild — whether through opportunity, mentorship, or simply serving food and coffee with integrity.
Manna Made isn’t just a catering company.
